1. Sencha

Grassy, a little sweet, and forgiving to brew. Sencha is the tea most households in Japan drink every day, which makes it the safest and most representative place to start.

2. Hojicha

Roasted rather than steamed, hojicha is naturally low in caffeine and almost impossible to over-steep. If sencha's grassiness isn't for you, this is the next stop.

3. Genmaicha

Sencha blended with roasted rice — nutty, comforting, and easy to drink without sugar or milk.

4. Matcha

More involved to prepare, but worth learning early if you want the ceremonial side of Japanese tea rather than just the everyday cup.

5. Gyokuro

Save this one for last. Shade-grown and umami-heavy, gyokuro rewards palates that already know what sencha tastes like — which is exactly why it's ranked here rather than first.
